This delicious recipe for dairy-free peanut butter cookie bars was originally a printed email from a friend. Through time, it was adapted to be dairy-free and the original frosting was removed. However, the sweet homestyle feel of the old-fashioned email still greets us when we open the cookbook. We hope you enjoy these delicious cookie bars, and are able to feel that homestyle feel and taste as you eat the best peanut-butter cookie bars you will ever eat.

These dairy-free peanut butter cookie bars are perfect because they can be cooked into many different pans. You can make these in cookie pans, 9*13’s or even other pans. But we decided to take them to the next level. With our ghost/snowman shaped cookie pan, we celebrated the Halloween season and enjoyed very spooky cookies! You can put them in your own special shaped pan (like a Christmas tree!) or enjoy traditional shaped pans! 

Why They're Special

These dairy-free peanut butter cookie bars are so amazing. They taste like peanut butter cookies, and hold together well enough you don’t have to stress about too many crumbs all over the floor. The oats elevate the texture and make it taste so perfect! 

Note from the Kids:

I don’t like oats. Period. Won’t eat oatmeal, oatmeal cookies, or anything like that. Honestly I was suspicious when I saw oats in these cookie bars. But I figured, “what could really be the harm of at least trying a bite?” and I tried a piece. Then I ate way more than I should have. What I’ve realized is that if you do like the oats, they just taste good in the cookies, and if you’re like me, and don’t like oats, they just become part of the background texture and the peanut butter is all you think about! 🙂

Mix the ingredients

  1. Mix sugar and oil.
  2. Add egg and mix.
  3. Add other ingredients and mix.
  1. Preheat oven to 350 degrees.
  2. Spray pan with cooking spray. Use a 9*13 pan, cookie pan, or seasonally fun cookie pan.
  3. Bake at 350 degrees for 12-15 minutes.
  4. Sprinkle with chocolate chips and them melt. While they're melted, you can spread the chocolate to create an even layer or let them cool in place like we did.
