Three weekends ago, the temperatures went from the high 90s to the high 60s. My husband and two oldest children had planned to hike the nearby mountain peak. One thing they didn’t count on was the time of day that the high temperature would occur. It happened to be at 8:00 in the morning. They left at 6:00 AM for their 10 mile hike. Blueberries in coconut milk for a whimsical, dairy-free summer treat.
This dessert was so simple to make. Normally, I just fill my popsicle molds with juice. I feel better feeding the kids something besides flavored sugar-water, and they are happy to have a cold treat on a hot day. But today, I thought I would try something different. As a kid, my mom was a director of a Suzuki violin and piano camp for several summers. A piano teacher from Texas stayed at our house and made these pancakes for us. After that, they became the standard pancake at our house.
